Coal Porter Cake

Cake


  • 1 cup A to Z Coal Porter* (if you can't get it, use Deschutes Black Butte Porter)

  • 1 stick butter, melted

  • 1 1/2 cups white sugar

  • 2 eggs

  • 3/4 cup unsweetened, dutch processed cocoa powder

  • 3/4 cup brown sugar

  • 3/4 cup sour cream

  • a few handfuls of chopped dark chocolate, or chocolate chips

  • a couple of handfuls of some chopped walnuts


  • 1 tbsp vanilla extract

  • 2 cups flour

  • 2 1/2 tsp baking flour

  • 1 tsp salt


Frosting

  • 8 oz cream cheese

  • 1 1/4 cup confectioners' sugar

  • just under 1/3 cup Coal Porter

  • a dash of heavy whipping cream (or milk)


Preheat over to 350ยบ F and grease a cake pan, or a couple of muffin tins for cupcakes.

In a big mixing bowl, mix the butter, sugars and eggs. Add the beer and cocoa powder. Mix in the sour cream and vanilla. Set aside.

In a separate bowl, sift the flour, baking soda, and salt together. Slowly mix into the chocolaty beer mixture, about 1/2 cup at a time. Once the flour mixture has been mixed in, stir in chocolate and walnuts.

Pour into desired pan and cook for about 40 minutes for a cake, about 25 minutes for cupcakes, or until an inserted toothpick in the middle comes out clean.

To make the frosting, just whip together the cream cheese, confectioners' sugar, beer and cream together. For a thicker frosting, cut back on the liquid and slightly increase the sugar. For a thinner frosting, add a little more beer (or cream if you want). Frost the cake once it has cooled.

*It's always good to start with 2 bottles of the Coal Porter. One for baking, the other for the baker.
